Here we have a roundup of delicious looking yet healthy St. Patrick’s Day treats and snacks. I am always looking for recipes that are simple to make, that are healthy and that do not cost a whole lot to make. That’s not too much to ask right? With green being such a dominant color for St. Patrick’s Day, there are all sorts of ideas to come up with because we are blessed with such an abundance of green fruits and vegetables, not to mention a veritable rainbow of other fresh fruits and veggies. My particular favorite is the Green Bell Pepper. Not only is it’s vibrant green color perfect for St. Patrick’s Day, but when the pepper is sliced, it lends itself to a clover shape, perfect for this holiday!
