Tuna Salad Bites
Tuna salad is pretty much at staple at our house, it is one of those foods I make just about every single week. One of my favorite things to do with tuna salad is to turn them into super quick and easy Tuna Salad Bites. I love that these tuna salad bites are they simple to prepare and that all of the ingredients are in everyone’s budget. I have been working on eating healthier the last year, avoiding processed foods and such and one of the things I have struggled with is finding budget-friendly snacks. This tuna salad bites recipe most definitely falls into that category! A regular can of tuna runs around $0.75 a can, cucumbers are often on sale for $0.50 or less and the other ingredients just cost pennies. I also love the presentation of tuna salad bites, tuna salad just isn’t the prettiest food and serving it this way really dresses it up. Anyway, here is my go-to Tuna Salad Bites Recipe.

Ingredients
1 Can of Chunk Light Tuna 5 oz
2 Tablespoons of Mayonnaise
3 Hard Boiled Eggs, chopped
2 Dill Pickle Spears, finely diced
Ground Black Pepper
Paprika
1 Cucumber, sliced
Instructions
First, drain the tuna and set aside. It is really important to take the time and drain the tuna thoroughly, otherwise, you will end up with a soggy tuna salad. If you prefer, you can use 2 pouches of tuna instead of the canned version. At this point I dice the pickle spears into fine little pieces. I used to make my tuna salad with relish, but I found that we like the crispiness of the pickles chopped up much better. Again, less soggy that way! Next, add the chopped eggs, tuna, mayonnaise and pepper and mix together. Spoon the tuna salad onto the slices of cucumber and then sprinkle with a touch of paprika on top.
Notes: I always love options, so here’s a couple of variations. One thing about tuna salad, it is very forgiving and can be made numerous ways, so, experiment and make it as you like! If you’re a fan of greek yogurt like I am, use half greek yogurt & half mayo instead of all mayo. I like to add a half a teaspoon of horseradish on occasion, it adds a nice extra zing! And instead of regular cucumbers, you can also use mini cucumbers or zucchini. And if you want to dress up your plate, you can use mini metal cutters on the cucumber you don’t use and cut out pretty floral shapes.
